HOW TO MAKE A ZEER POT, IN SIX SIMPLE STEPS:
- 1. Clay is pressed onto bowl-shaped moulds to make pots of different sizes, then fired.
- 2. A small pot is placed inside a larger one.
- 3. The space between the two pots is filled with sand.
- 4. Water is added to the sand between the pots twice a day to keep it moist.
- 5. Fruit and vegetables are placed in the smaller pot and covered with a damp cloth. The whole structure is placed on a stand which lets air flow underneath.
- 6. The water in the sand evaporates towards the surface of the larger pot. This causes a drop in temperature of several degrees, cooling the inner pot and extending the shelf life of the food inside.
