      Long pepper is a different species to the more common pepper. It produces tiny berries that grow in combination to form small rods or spikes that look similar to catkins. These are dried whole and then when required for cooking can be crushed or grated. In its simplest form the drying process will be is done in the sun for 4 to 5 days. If special drying equipment is used then the drying time will become shorter.
